Tartare Burger with Celery-Caper Sauce

A quick-seared tartare patty on toasted bread with lettuce, tomato, onion rings, and a rich sauce made from celery, capers, shallots, red wine, pancetta, and butter.

    Preheat oven and toast bread bun halves.

    Chop celery, pancetta, capers, shallots, and garlic. Grate butter and chili onto the cutting board.

  3. 03

    In a hot pan, melt butter and add the chopped mixture. Simmer until softened.

    Add red wine to the pan and let it simmer. Transfer the sauce to a glass bowl.

    In the same pan, sear the tartare patty on high heat until crispy outside, soft inside. Add butter and baste.

    Flip the patty and continue basting. Remove patty and set aside.

    Add fresh green herbs to the pan with remaining liquid and simmer briefly.

    Assemble the burger: bottom bun, lettuce, tartare patty, tomato slice, onion rings, a dollop of mayonnaise, a spoonful of the celery-caper sauce, and a whole green chili pepper.

  9. 09

    Spoon the simmered sauce from the pan over the top. Place the top bun and serve.
