Conchiglie with Minced Meat, Pancetta, and Mushrooms

A hearty pasta dish with minced meat, pancetta, mushrooms, cherry tomatoes, and sun-dried tomatoes in a creamy sherry sauce.

Hoe doe je het

  1. 01

    Slice mushrooms and sear them in a hot pan with olive oil until browned. Remove and set aside.

    Finely chop shallots and add to the pan. Sweat them.

  3. 03

    Add cherry tomatoes, minced meat, garlic, and pancetta to the pan. Cook until meat is done.

  4. 04

    Return the cooked mushrooms to the pan.

  5. 05

    Add chopped sun-dried tomatoes and a splash of sherry. Let the sherry cook off.

    Add a ladle of pasta water and cream. Stir to combine.

  7. 07

    Cook conchiglie pasta in boiling water until al dente. Drain and add to the sauce.

    Stir everything together. Plate and garnish with fresh thyme.

How to make it:
Sear the mushrooms fast and hot - take them out.
Let the shallots sweat, add tomatoes, mince, garlic and pancetta.
When the meat’s done, add the mushrooms back in.
Pour in a dash of sherry, let it cook off, then add the cream and pasta.
Finish with fresh thyme.
