A creative way to turn leftover risotto and odds and ends from the fridge into a delicious one-pan meal.

- leftover risotto
- parsley
- onion
- lemon
- garlic
- tomato
- mushrooms
- prawns
- thyme
- bouillon
- butter
- white wine
- cheese
- olive oil
Hoe doe je het

Add bouillon to the pan.

Add leftover risotto.

Slice mushrooms, shallot, prawns, and tomato; smash garlic.

Heat oil in a small pan, add chopped ingredients and butter, cook while stirring.

Squeeze lemon over the mixture and stir.

Transfer cooked mixture to a larger pot.

In the small pan, add rice and white wine, stir.

Ladle broth from the larger pot into the rice, stirring continuously.

Grate cheese and add to the risotto, stir.

Serve risotto on a plate, top with more grated cheese.
