A delicious organic croissant topped with two fried eggs, tomato, avocado, raw salmon, and young goat cheese, baked briefly to melt the cheese and slightly cook the salmon.

- 2 eggs
- 1 tomato
- 1 avocado
- raw salmon (small piece)
- young goat cheese from Friesland (cubes)
- butter (1 slice)
- oil (for frying)
- pepper (to taste)

Cut the croissant horizontally in half.

Put the sandwich on a baking tray and bake in a preheated oven at 220°C for a few minutes until the cheese is creamy and the salmon is slightly cooked.
