Dutch Autumn Sandwich with Sauerkraut Mash and Sausage

  • 2 organic pork sausages
  • 1 slab pancetta
  • 1 lemon
  • 1 garlic clove
  • 1 onion
  • small handful arugula
  • several small potatoes
  • sauerkraut (from package)
  • butter
  • salt and pepper to taste

    Preheat oven to toast the bread roll.

    Peel and boil the potatoes until tender.

    In a frying pan over medium heat, cook the sausages until browned and cooked through.

    Slice the pancetta into thick pieces and add to the pan with the sausages. Cook until crispy.

    Drain the potatoes and mash with butter. Mix in sauerkraut to taste.

    Toast the bread roll in the oven until golden.

    Slice the cooked sausage into rounds.

    Assemble the sandwich: spread sauerkraut mash on the bottom half of the roll, top with sausage slices, crispy pancetta, raw onion rings, thin lemon slices, and arugula.

    Drizzle with the buttery pan gravy from the sausage and pancetta.
