Raw Baby Spinach Salad with Miso Dressing
A delicious raw baby spinach salad with a savory miso dressing, fried spring onions, Parmesan, and boiled eggs.

- 3 tbsp olive oil
- 1 tbsp mirin
- 1 tbsp truffle oil
- 1 tbsp soy sauce (Shoyu Mild)
- 1 tbsp sesame oil
- 1 tbsp miso paste
- spring onions (fried)
- lemon juice (squeeze)
- fresh raw baby spinach
- grated Parmesan cheese
- 2 boiled eggs

Make the dressing: In a measuring cup, combine olive oil, mirin, truffle oil, soy sauce, sesame oil, and miso paste. Whisk together.

Fry chopped spring onions in a pan with oil until cooked.

Add the fried spring onions to the dressing and stir. Add a squeeze of lemon juice and mix.

In a wooden bowl, combine fresh raw baby spinach and peeled hard-boiled eggs (whites and yolks).
