Spanish Fried Cod with Padrón Peppers and Saffron Mayo
Golden fried cod served on a bed of padrón peppers with toasted bread and a smooth homemade saffron mayo.

- 2 eggs
- flour
- 2 pieces of cod
- padrón peppers
- baguette
- olive oil
- butter
- 1 egg (for mayo)
- splash of white wine vinegar
- 150 ml sunflower oil
- saffron

Crack two eggs into a bowl and whisk. Add a splash of white wine vinegar and continue whisking.

Slowly blend in about 150 ml sunflower oil while whisking until creamy. Stir in a touch of saffron at the end. Set aside.

Cut baguette into thick slices. Heat olive oil in a pan and toast the bread slices on both sides. Remove and set aside.

Coat the cod pieces in flour, then dip them into the beaten egg.

Heat oil and a pat of butter in a pan. Fry the egg-coated fish until golden on both sides. Add padrón peppers to the pan and cook until tender.

Place toasted bread on a plate, top with cooked peppers, then the fried fish. Generously spoon saffron mayo over the top. Serve immediately.
