Potato, Green Bean, and Tuna Salad with Tangy Vinaigrette

- 2 egg yolks

- olive oil (drizzle)

- salt & pepper (to taste)
- potatoes (3, peeled and cubed)
- green beans (handful, trimmed)
- tuna (1 can, drained)
- shallot (1, chopped)
- white wine (optional, for serving)
