Pan-Fried Zucchini Fans with Spiced Egg Coating
Crispy pan-fried zucchini slices coated in a spiced egg batter, served with garlic and a squeeze of lime.

- 1 zucchini
- 2 organic eggs
- white flour (for coating)
- butter
- olive oil
- garlic cloves (whole)
- lime (half)
- wild Ceylon cinnamon
- sweet paprika
- Island Black Peppers
- salt (optional, from video)

Cut the ends off the zucchini. Score lines along the zucchini with a fork, then slice lengthwise into thin strips. Arrange the strips into a fan shape.

In a shallow dish, mix 2 eggs with cinnamon, paprika, and black pepper. In another dish, place white flour.

Coat the zucchini strips first in flour, then in the egg mixture, ensuring they are fully covered.

Heat olive oil and butter in a frying pan over medium heat. Add whole garlic cloves to the pan.

Place the coated zucchini strips in the hot pan. Pour any remaining egg mixture over the zucchini. Squeeze lime juice over the top.

Pan-fry for about 8 minutes total, flipping halfway, until golden brown and crispy on both sides.

Transfer to a cutting board, cut into pieces, and serve.
