Pesto Toast with Roasted Tomatoes and Melted Cheese
A flavor bomb on toast! Homemade pesto, roasted tomatoes, melted young cheese, and crispy homemade croutons with fresh basil.

- 2 slices bread
- olive oil
- pine nuts
- shredded cheese (for pesto)
- fresh basil leaves
- dark paste (e.g., sun-dried tomato or tapenade)
- garlic cloves
- cherry tomatoes
- salt
- pepper
- young cheese (for melting)

Toast pine nuts in a hot pan until golden.

In a measuring cup, combine olive oil, toasted pine nuts, shredded cheese, fresh basil leaves, and a small amount of dark paste. Blend with an immersion blender until smooth. Taste and adjust seasoning.

Cut bread slices into small cubes for croutons. Toast the bread slices in a toaster.

In a pan, heat olive oil and add garlic cloves. Add bread cubes and toss until crispy and golden. Remove croutons and garlic to a bowl.

In the same pan, add cherry tomatoes (whole and halved). Season with salt and pepper and cook until softened.

Spread the pesto mixture onto the toasted bread slices.

Top the pesto toast with the cooked cherry tomatoes.

In the same pan, melt slices of young cheese. Pour the melted cheese over the tomatoes.

Garnish with the crispy croutons and fresh basil leaves. Serve immediately.
