Spanish-Indian Organic Lamb Curry over Fire

    Sear the lamb leg on both sides in a hot pan over the fire for a couple of minutes to get a crust.

    Remove from heat and rub with a spice mix of curry powder, turmeric, paprika, and olive oil.

    Cut the seared lamb into bite-sized pieces.

    In a fireproof Spanish dish, add potatoes and chopped white onion, then place over the fire and stir.

    Add the seasoned lamb pieces to the dish.

    Add all the veggies: zucchini, red and white onions, garlic, tomatoes, broad beans, lemon, and green chili.

    Add fresh rosemary and thyme sprigs, drained white beans, and black olives.

    Pour in a splash of organic chicken broth to cover the ingredients.

    Cover the dish with a straw hat and let it simmer gently over the fire for about 30 minutes.
