Pescaditos Fritos with Homemade Aioli

    Coat the small whole fish in flour and salt.

    Fry the fish in hot oil over an open fire for about 3 minutes until golden and crisp.

    To make the aioli: Add one egg, a splash of vinegar, and a spoonful of mustard to a tall jar.

    Blend with an immersion blender and slowly drizzle in olive oil until it thickens.

    Add a few cloves of fresh garlic and blend again.

    Serve the fried fish with the aioli and lemon wedges. Eat the fish whole, head and tail included.

Inspired by a Spanish classic, I made these crispy little fish - pescaditos fritos -right over an open fire! 

I use small whole fish (sand eels), coat them in flour and salt, and fry them for about 3 minutes until golden and perfectly crisp.

And the best part? Dipping them in homemade aioli - packed with garlic and full of creamy, bold flavor.

How to make the aioli:

Add one egg, a splash of vinegar, and a spoonful of mustard to a tall jar. Blend with an immersion blender and slowly drizzle in olive oil until it thickens. Finish with a few cloves of fresh garlic and blend again. Done!

You eat the fish whole - head and tail included.
