Fire-Roasted Organic Veggies with Croutons and Feta
Fire-roasted paprika, zucchini, and eggplant mixed with toasted bread cubes for crunch, finished with garlic, lemon, soy sauce, and crumbled feta.

- 1 red bell pepper
- 1 zucchini
- 1 eggplant
- 1 lemon
- 4 cloves garlic
- bread (for croutons)
- olive oil
- salt
- soy sauce
- feta cheese

Slice bread into small cubes and set aside.

Dice the zucchini, red bell pepper, and eggplant into cubes.

Add more olive oil to the griddle, then add the diced vegetables and garlic. Sprinkle with salt and stir.

Cook the vegetables for about 15 minutes on medium-high heat, stirring occasionally.

Add the toasted bread cubes back to the griddle and stir to combine.

Crumble feta cheese over the mixture and stir.
