Organic Artichoke with Vinaigrette
A simple yet delicious organic artichoke served with a rich, homemade vinaigrette. Perfect as a starter or snack.

- 1 organic artichoke
- 1 lemon, halved
- 2 cloves garlic
- splash of white wine
- 1 raw organic egg yolk
- 1 tbsp white wine vinegar
- 1 generous spoon mustard
- 1 anchovy fillet, finely chopped
- organic olive oil, to taste

Cut off the stem of the artichoke.

Boil the artichoke in a large pan of water with lemon, garlic, and a splash of white wine. Simmer gently for 25–30 minutes.

For the vinaigrette: In a bowl, combine raw organic egg yolk, white wine vinegar, and a generous spoon of mustard. Stir well.

Add finely chopped anchovy and mix again.

Slowly pour in organic olive oil while whisking continuously until emulsified.

Pull the leaves from the cooked artichoke and dip them in the vinaigrette.
