Organic Stuffed Avocado with Salmon
Fresh and healthy stuffed avocado with raw salmon, boiled egg, and a hint of wasabi. Perfect as a light lunch or sharing platter.



Wat erin gaat
- 2-3 organic avocados
- Raw organic salmon (sushi-grade), about 200g
- 3 boiled organic eggs
- 1 finely chopped shallot
- Fresh chives, a bunch
- Splash of lemon juice
- Soy sauce, a touch
- Wasabi, a hint
- Nori seaweed (optional, for garnish)

Boil the eggs in a small pot of water until hard-boiled, then peel and set aside.

Cut the salmon into small, bite-sized pieces and place in a bowl.

Cut the avocados in half, remove the pits, and scoop out the flesh with a spoon, leaving the skins intact. Add the avocado flesh to the bowl with salmon.

Squeeze half a lemon over the ingredients in the bowl.

Finely chop the chives and add to the bowl.

Add the peeled boiled eggs and chopped shallot to the bowl.

Add a splash of soy sauce and a hint of wasabi.

Mix all ingredients together with a fork until well combined.

Spoon the mixture back into the avocado skin halves.

Optionally, place a piece of nori seaweed on top of each filled avocado half. Serve immediately.
