Mediterranean Gamba Blanca
Fresh Mediterranean prawns marinated in garlic, herbs, beer, and wine, then pan-fried in olive oil.

Pull dry roots from the ground and light a fire using sticks and pine cones in a metal box.

Cut fresh herbs (thyme, rosemary) from the garden.

Place raw shrimp in a metal mixing bowl. Pour olive oil over them and sprinkle with seasoning (garlic, thyme, rosemary, chili flakes).

Add chopped red onion and lemon slices to the bowl. Pour a splash of beer and white wine. Mix thoroughly with your hands.

Place a terra cotta pot on the fire. Add halved garlic head and fresh herbs to the pot, then pour in olive oil.

Transfer the shrimp mixture into the hot pot. Cook for about 4 minutes, stirring with a wooden spoon.

Pour the cooked shrimp and ingredients onto a white plate. Serve on a rock or table.

Fresh Gamba Blanca from the Mediterranean! Marinated in garlic, thyme, and rosemary straight from the garden, plus a splash of beer, white wine, and a few dried chili flakes for that subtle kick. I fry them in homemade olive oil from our land. First, I toast a halved garlic bulb and some rosemary in the oil to bring out the aroma… then in go the prawns. About 4 minutes in the pan , and done! These are without a doubt the best shrimp you’ll ever taste. Simple. Pure.
