Twice-Fried Marinated Chicken Wings
Crispy, juicy chicken wings marinated with garden-fresh herbs and spices, then twice-fried over a fire.

- 1 large tomato, diced
- curcuma spices
- chili flakes
- black pepper
- sea salt
- olive oil
- lots of garlic
- 1 red onion, chopped
- lemon (juice)
- ginger/turmeric piece
- flour (for dusting)

Chop fresh thyme and rosemary from the garden.

In a metal pan, combine chicken wings with chopped herbs, diced tomato, curcuma spices, chili flakes, black pepper, sea salt, olive oil, lots of garlic, chopped red onion, lemon juice, and a piece of ginger/turmeric. Mix well.

Let marinate for at least 1 hour.

Start a fire in a small grill.

Place a clay pot on the hot grill and add water.

Transfer the marinated chicken wings and vegetables into the clay pot. Stir with tongs.

Fry the chicken wings for about 8 minutes.

Dust the wings lightly with flour.

Fry again for another 10 minutes, turning occasionally, until crispy outside and juicy inside.

Remove from heat and serve.
