Organic Chicken & Cashew Stir-Fry
A quick and flavorful stir-fry with organic chicken, toasted cashews, and a savory sauce, served over rice.

- organic cashew nuts
- olive oil
- dried chili flakes
- organic chicken thigh pieces
- bell pepper (yellow), sliced
- onions, sliced
- garlic, plenty chopped
- spring onions, chopped
- soy sauce, a splash
- oyster sauce, a splash
- wheat flour, 2 tablespoons
- water, a little
- cooked organic rice

Toast organic cashew nuts in olive oil with dried chili flakes for a few minutes, then remove from wok.

Add organic chicken thigh pieces to the wok and stir-fry until golden.

Add sliced bell pepper, onions, and plenty of garlic. Stir-fry for about 10 minutes.

Add spring onions, a splash of soy sauce, and a splash of oyster sauce.

Return the toasted cashews to the wok.

Mix 2 tablespoons of wheat flour with a little water and add to the wok to thicken slightly.
