Organic Pasta with Violet Asparagus and Creamy Yolk-Parmesan Sauce

  • pasta water (or asparagus peel stock)

  • extra Parmigiano Reggiano for finishing
  • pepper (optional, from video)

Hoe doe je het

  1. 01

    Whisk together 3 organic egg yolks with 4 heaping spoons of grated Parmigiano Reggiano.

  2. 02

    Cut the violet asparagus into chunks.

  3. 03

    Cook the asparagus chunks together with the pasta in boiling water for about 10 minutes.

  4. 04

    Drain the pasta and asparagus, but keep some cooking water (or use asparagus peel stock).

  5. 05

    Add 3 generous spoonfuls of hot pasta water to the yolk-cheese mix and stir quickly.

  6. 06

    Pour the mixture over the pasta and stir for about 2 minutes.

  7. 07

    Drizzle with olive oil, finish with more Parmigiano, and optionally add pepper.

    Serve and enjoy every creamy bite!

This one is rich, silky, and full of spring flavor, but still super simple to make!

For the sauce:
Whisk together 3 organic egg yolks (for 4 people) with 4 heaping spoons of grated Parmigiano Reggiano.

Cut the violet asparagus into chunks and cook them *together with the pasta, this way the pasta absorbs some of that subtle asparagus flavor.

After 10 minutes, drain the pasta but keep some cooking water. I used asparagus peel stock I had left from a few days ago, but pasta water works just as well!

Add 3 generous spoonfuls of hot pasta water to the yolk-cheese mix, stir quickly, and pour over the pasta. Stir for about 2 minutes, add a drizzle of olive oil, finish with more Parmigiano... and enjoy every creamy bite!

Note: All ingredients used are organic, including the eggs, cheese, asparagus, and olive oil.
