Organic Rice with Chicken and Pak Choi
Quick and flavorful chicken and pak choi in a creamy miso coconut sauce, served over organic rice.

Marinate chicken pieces in soy sauce, rice wine, garlic, ginger, pepper, and olive oil for 5 minutes.

Sear chicken in butter in a hot pan.

I start by marinating the chicken (just 5 minutes is enough) in a splash of soy sauce, Taiwanese rice wine (Shaoxing), garlic, fresh ginger, cracked black pepper, and a little olive oil. Then I sear the chicken briefly in organic butter and stir in a spoonful of miso paste. After that, I add a can of coconut milk and let it simmer gently until the chicken is perfectly cooked. Finally, the star ingredient: pak choi. Toss it in right at the end and let it cook for just one minute – it stays crispy, vibrant, and full of flavor. Serve everything over a bed of organic rice.
