Creamy Organic Leek Risotto

Hoe doe je het

    Chop the leek into small, uniform pieces.

    Melt a pat of butter in a frying pan over medium heat.

    Add the chopped leeks and toss to coat in butter.

    Add rice to the pan and toss with the leeks.

    Add two more pats of butter and stir.

    Dissolve an organic bouillon cube in hot water to make broth.

    Pour some broth into the pan and stir.

    Continue adding broth gradually, stirring frequently, until rice is creamy and cooked.

    Add a splash of champagne (or white wine) and stir.

    Grate Parmigiano Reggiano cheese and add to the pan, stirring to combine.

    Serve the risotto in a bowl, top with more grated cheese and garnish with strips of leek greens.
