Pescaditos Fritos (Crispy Fried Fish, Spanish Style)
Crispy fried small whole fish, Spanish-style, cooked over an open fire and served with homemade garlic aioli.

Prepare the aioli: Crack several eggs into a mixing bowl. Add a dollop of mustard. Whisk together.

Continuously pour oil into the egg mixture while whisking until it thickens into a creamy white sauce.

Crush and finely chop garlic cloves, then add to the sauce and whisk to combine. Optionally, zest lemon over the sauce.

Build a fire in a metal container and let it burn down to embers and ash.

Place small whole fish in a bowl and pour flour over them. Toss to coat evenly.

Place a grill grate over the embers and set a terracotta pot on it. Pour oil into the pot and heat.

Add a spoonful of flour-coated fish to the hot oil and fry for about 3 minutes until golden and crispy.

Remove fried fish and place on a plate. Squeeze lemon over the fish.

Serve with the aioli and olives. Eat the fish whole, dipping into aioli.
