    Hard-boil the eggs, then peel and halve them. Separate the yolks from the whites.

    Cut the avocados in half and remove the pits. Place an egg yolk in the pit cavity of each avocado half.

    Add the Dutch shrimp to the bowl with the egg whites.

    Make the sauce: mix mayonnaise with a spoonful of soy sauce, a dash of wasabi paste, a spoonful of Shaoxing wine, and a squeeze of fresh lemon.

    Pour the sauce over the shrimp and egg white mixture and stir gently.

    Season with pepper and a squeeze of lemon, then stir again.
