Organic Pasta with Shrimp and Arugula

    Cook pasta in salted boiling water until al dente.

    Finely chop garlic, shallot (or onion), and fresh chili.

    Heat olive oil in a pan over medium heat. Add garlic and shallot, cook until softened.

    Add butter, salt, and pepper to the pan.

    Add shrimp and cook until pink.

    Pour in a splash of white wine and let it simmer.

    Add cooked pasta to the pan and toss.

    Using scissors, snip fresh parsley and chives directly into the pan. Add chopped chili.

    Toss everything together and transfer to a serving bowl.

    Add fresh arugula and grate Parmigiano Reggiano generously over the top.
