Organic Shoulder Pork Chop Sandwich

Prepare the marinade: in a bowl, combine soy sauce, olive oil, thyme, lemon slices, tomato slices, black pepper, crushed garlic, ginger slices, red onion slices, and red chili slices.

Add the pork chops to the marinade, rub to coat, cover, and marinate for about 1 hour.

Slice the baguette into thick rounds and toast them.

Slice the padrón peppers in half lengthwise.

In a pan over medium heat, add olive oil and a pat of butter. Fry the padrón peppers until blistered and tender. Remove and set aside.

In the same or another pan, add olive oil and butter. Cook the marinated pork chops until browned and cooked through, flipping once. Remove and let rest.

Deglaze the pan with a splash of water, scraping up the browned bits to make a sauce.

Slice the cooked pork chops into bite-sized pieces.

Assemble the sandwiches: place a lettuce leaf on each toasted bread slice, top with pork pieces, a fried padrón pepper half, and drizzle with the pan sauce.

An organic shoulder pork chop sandwich! It’s inspired by Spanish tapas but with my own marinade: soy sauce, olive oil, thyme, lemon, tomato, pepper, garlic, and ginger. Marinate the pork for about an hour—it’s enough to soak up all those incredible flavors. The shoulder pork chop is so flavorful on its own, but this marinade takes it to the next level. For the sandwich: lightly toast some bread, add a crisp iceberg lettuce leaf, then the juicy pork chop. Top it with fried padrón peppers and drizzle with the leftover juices from the meat.
