Pan Pizza
A childhood favorite: crispy pan-fried bread topped with cheese, tomatoes, onions, anchovies, and herbs.

- yellow cheese (e.g., Gouda or similar)
- shredded cheese for skirt
- sliced tomatoes
- red onion rings
- white onion rings
- anchovies (small brown rectangular pieces)
- dried Provençal herbs (thyme, oregano, rosemary)
- butter

Prepare toppings: slice tomatoes, red and white onions into rings, and shave cheese slices.

Place cheese slices on each bread slice.

Arrange tomato slices, onion rings, and anchovies on top of the cheese.

Heat a metal pan over a gas burner and add butter to melt.

Place the assembled bread slices cheese-side down into the melted butter.

Cook until the bottom is golden brown and the cheese is melted, then flip each slice.

Sprinkle shredded cheese directly into the hot pan around the toasted bread slices to create a crispy cheese skirt.

Remove pan from heat, then use tongs to lift each bread slice with the attached cheese skirt.

Place on a cutting board, cut diagonally in half, and serve.

It’s so good, and while it’s not widely known, now you can make it too! 😋 Note: All ingredients I used are organic products! Did you know? Dried herbs like thyme, oregano, and rosemary are not just flavorful; they’re also rich in antioxidants, vitamins, and minerals. While drying herbs does reduce some vitamin content, many of the nutrients, such as vitamin K and certain polyphenols, remain intact. Drying preserves their flavor and aroma, making them a healthy and convenient way to enhance your dishes.
