For making this at home: grate the Pecorino cheese and place it in an aluminum bowl, then add some hot pasta water (from the cooking spaghetti) and gently stir until it becomes a smooth, creamy mixture. Place the bowl in a pan of boiling water (this is called a bain-marie), and slowly finish the sauce by whisking it with more pasta water and possibly a bit of extra grated cheese. Add the crushed peppers and the cooked spaghetti, then toss it all together. Serve with a sprinkle of extra pepper and some more grated Pecorino. This is just soooo delicious!
