  • 1 tablespoon mustard
  • A splash of white wine vinegar
  • 1 teaspoon honey
  • Black pepper to taste

The dressing is made from organic Greek yogurt, a little mayonnaise, white wine vinegar, good honey, mustard, and a squeeze of lemon juice for both flavor and to prevent the endive from turning brown. Every bite melts in your mouth. 😋

Did you know? Belgian endive, also known as witlof, is a very healthy leafy vegetable. It's rich in fiber, vitamin C, and folate, and it has very few calories, making it great for digestion and overall health. Belgian endive grows in complete darkness to prevent it from turning green.
