Organic Belgian Endive Salad—By Far the Best! This is by far the freshest, most flavorful Belgian endive salad you could imagine! It tastes so light and delicious that you’ll want to eat it every day. What’s in it? Finely chopped Belgian endive, larger pieces of apple (they taste better this way), and sliced red onion. The dressing is made from organic Greek yogurt, a little mayonnaise, white wine vinegar, good honey, mustard, and a squeeze of lemon juice for both flavor and to prevent the endive from turning brown. Every bite melts in your mouth. 😋 Did you know? Belgian endive, also known as witlof, is a very healthy leafy vegetable. It's rich in fiber, vitamin C, and folate, and it has very few calories, making it great for digestion and overall health. Belgian endive grows in complete darkness to prevent it from turning green. The process involves forcing the roots in dark, cool conditions, allowing the pale, crunchy leaves to develop, which gives it its signature slightly bitter yet refreshing taste. Well, now you know! 😉 How to make it at home: - 3 heads of Belgian endive, finely chopped - 1 apple, cut into slightly larger pieces - 1 red onion, sliced Mix these ingredients together, then squeeze lemon juice over them to prevent browning and to add a bright flavor. For the dressing: - 2 tablespoons Greek yogurt - 1 tablespoon mayonnaise - 1 tablespoon mustard - A splash of white wine vinegar - 1 teaspoon honey Stir everything together and enjoy! #BelgianEndiveSalad #OrganicCooking #HealthyAndDelicious #UnderTheSmokeOfAmsterdam #FreshAndLight
