Organic Sausage Roll with Dutch Watercress

  • Mustard (1 spoon, for dressing)
  • Tabasco (a dash)
  • 2 anchovy fillets (finely chopped)

    Remove casings from sausages.

    Dust a clean surface with flour. Place puff pastry sheets on the floured surface.

    Place de-cased sausage meat on each pastry sheet.

    Snip fresh thyme over the sausage and drizzle with mustard.

    Roll the pastry around the sausage and crimp edges with a fork.

    Brush the rolled pastries with egg yolk (egg wash).

    Cut each roll into smaller sections and place on a baking sheet lined with baking paper.

    Bake for 15 minutes at 200°C until golden.

    Meanwhile, make the dressing: In a measuring cup, combine a dollop of mayonnaise, a spoon of mustard, a dash of Tabasco, and two finely chopped anchovies. Whisk in olive oil until smooth and creamy.

    Place Dutch watercress in a bowl, pour dressing over, and toss to coat.

    Serve baked sausage rolls with the watercress salad.
