  • 1 whole brown onion
  • 2 cloves garlic, chopped
  • Olive oil
  • Sesame oil
  • Soy sauce
  • Lemon juice
  • Salt
  • Pepper
  • Small pieces of toasted bread
  • White powder (likely cheese, optional)
  • White wine (for serving)

Hoe doe je het

    Place pine cones and almond wood in an outdoor stone oven and ignite to create a fire. Let it burn down to coals.

    Place the whole eggplants and onion directly onto the burning coals. Cook for 15-20 minutes until charred and soft.

  3. 03

    Remove the charred eggplants and onion from the fire using tongs. Place them in a brown ceramic bowl.

  4. 04

    Peel the skin off the eggplants and onion. Scoop out the flesh into the bowl, discarding the skins.

  5. 05

    Add chopped garlic to the bowl. Mash and mix the eggplant, onion, and garlic with a wooden spoon until creamy.

    Season the mixture with olive oil, sesame oil, soy sauce, lemon juice, salt, and pepper to taste. Mix well.

    Spread the mixture onto small pieces of toasted bread.

    Optionally, sprinkle white powder (likely cheese) over the toasts and use a kitchen torch to briefly char the tops.

    Serve with white wine. Enjoy!

Another fire-cooked delight: Charred organic graffiti eggplant with roasted onion on toast! 🔥🍆 I placed the eggplant directly in the fire, made with pinecones and almond wood. The smoky aroma from the wood beautifully infuses the eggplant. Then, I turned it into a creamy mousse, finished with olive oil, garlic, sesame oil, and a splash of soy sauce. Of course, a little salt and pepper to taste. The eggplant and onion spend about 15-20 minutes on the fire to reach perfection. 

Did you know eggplants are low in calories? And they’re packed with vitamin B, folic acid, magnesium, and other minerals? Well, now you do! 😉
