Spanish Ensalada Rusa (Russian Salad) over Open Fire
A smoky twist on the classic Spanish potato salad, with potatoes baked in the coals and vegetables sautéed over a wood fire, finished with tuna, homemade mayonnaise, hard-boiled eggs, and anchovies.

Place foil-wrapped potatoes directly into hot coals of a wood fire and bake until tender.

Place diced carrots and green peas on a perforated tray, drizzle with olive oil, and stir.

Place the tray on a grill grate over the fire and sauté the vegetables until cooked, stirring occasionally.

Hard-boil 2 eggs (can be done on the fire or beforehand). Peel and dice them.

Once potatoes are cooked, remove from coals, unwrap, cut in half, and scoop out the soft flesh.

In a large wooden bowl, combine the cooked potato flesh, sautéed carrots and peas, diced hard-boiled eggs, and canned tuna.

Add mayonnaise and a drizzle of olive oil, then mix thoroughly until creamy.
