  1. 01

Wrap potatoes individually in aluminum foil.

  2. 02

Place foil-wrapped potatoes directly into hot coals of a wood fire and bake until tender.

  3. 03

    Dice carrots into small pieces.

  4. 04

Place diced carrots and green peas on a perforated tray, drizzle with olive oil, and stir.

  5. 05

Place the tray on a grill grate over the fire and sauté the vegetables until cooked, stirring occasionally.

  6. 06

Hard-boil 2 eggs (can be done on the fire or beforehand). Peel and dice them.

  7. 07

Once potatoes are cooked, remove from coals, unwrap, cut in half, and scoop out the soft flesh.

  8. 08

In a large wooden bowl, combine the cooked potato flesh, sautéed carrots and peas, diced hard-boiled eggs, and canned tuna.

  9. 09

Add mayonnaise and a drizzle of olive oil, then mix thoroughly until creamy.

  10. 10

Arrange elongated crackers on a serving board. Place a scoop of the potato salad mixture on each cracker.

  11. 11

Top each cracker with an anchovy fillet. Serve and enjoy.

Spanish Ensalada Rusa made over an open fire with almond and pine wood!
🔥
Yes, you read that right. The base of this delicious salad is potatoes—now baked directly in the fire. I also sauté the peas and carrots over the wood fire. Canned tuna adds that classic touch, mixed with homemade mayonnaise, two hard-boiled eggs, and finished with delicious anchovies. The light smoky flavor from the wood fire takes this salad to a whole new level… it truly dances on your tongue! 😋

Did you know? Ensalada Rusa, also known as Russian Salad, is a popular dish in Spain despite its name. It was inspired by the Olivier salad, created in the 1860s by a Belgian chef at a fancy restaurant in Moscow. The Spanish version has evolved with local ingredients, becoming a beloved tapas dish. Well, now you know! 😉

Want to make it at home? Simply boil the potatoes, peas, and carrots. Mix them all together, add the tuna, mayonnaise, and hard-boiled eggs. It’s delicious like this, too… but not quite as tasty as when it’s kissed by the wood fire. 😉🔥
