Charred Bell Pepper Salad with Feta and Herbs

    Build a fire in a fire pit and let it burn down to hot coals.

    Place whole bell peppers directly onto the hot coals or burning wood using tongs.

    Char the peppers, turning occasionally, until the skins are completely blackened.

    Remove the charred peppers from the fire and place them in a wooden bowl to cool slightly.

    While peppers cool, strip rosemary leaves from sprigs and chop other fresh herbs. Mince garlic.

    Scrape off the charred skin from the peppers. Slice or dice the peeled peppers.

    Slice or dice the feta cheese.

    In a wooden bowl, combine the charred peppers, diced feta, chopped herbs, and minced garlic.

    Drizzle generously with organic olive oil. Optionally, add a splash of white wine.

    Mix well with two forks. Serve in a black bowl.
